Our Knead story began in Eltham Taranaki – my partner and I started by juggling fulltime dairy farming, 2 young tamariki & baking once a month out of a small cafe kitchen during the middle of the night and attending a monthly local market in to sell our artisan baked products.
Once baked, an under-kneaded bread loaf will be flat and dense in texture. If kneading helps line up proteins and form a gluten matrix, it seems counterintuitive that no-knead bread can still form light, fluffy loaves. However, gluten can form naturally by allowing the dough to ferment for 12 or more hours.
Kneading a basic bread dough by hand generally takes about 10 minutes to form adequate gluten. Flour can be slowly added to the dough as it is kneaded to prevent it from sticking, but care should be taken to not add too much. Adding too much flour during this process can create a stiff, dry dough.
If you choose to knead your dough with a hand mixer, you must stop the mixer every few minutes and check in on your dough. This is especially true if you’re new to baking bread and are still trying to learn the signs of over-kneaded vs. under-kneaded dough.
The Knead menu is very exciting and it makes for a great breakfast spot. The staff where friendly and we were served quickly, but both the coffee and the food were cold. The food was well presented and tasty. I’d eat here again.
